Lovin' on Grandkids, & Lovin' Grandpa on 50th Anniversary

Grandma Myrt always loved snuggling with her babies and grandbabies.  She would get so excited with her fun play with them.  This photo is of Grandma Myrt and baby Levi

Huge Batch of Pies

 (note it says for 81 pies)

Creamed Cucumbers

Creamed Cucumbers

5 cucumbers, peeled and thinly sliced
1 bunch green onions with tops, chopped
1 cup mayonnaise
¼ cup evaporated milk
¼ cup vinegar
¼ cup sugar
2 drops hot pepper sauce
1 tsp dried parsley flakes
1 tsp salt
¼ tsp pepper
¼ tsp garlic salt
¼ tsp onion salt

Combine cucumbers and green onions in a large bowl.  Cover and let stand for 1 hour.  Combine all remaining ingredients; pour over cucumber mixture and mix well.  Refrigerate for several hours.  Yield: 10 – 12 servings.


Kansas Cucumber Salad

Kansas Cucumber Salad

1 cup mayonnaise or salad dressing
¼ c. sugar
4 tsp vinegar
½ tsp dill weed
½ tsp salt, optional
4 med. Cucumbers, peeled and thinly sliced
3 green onions, chopped


In a large bowl, combine mayonnaise, sugar vinegar, dill and salt if desired; mix well.  Add cucumbers and onions; toss.  Cover and shill for at least 1 hour.  Yield 8 servings

Mary's Bread & Butter Pickles

Mary’s Bread & Butter Pickles             
(used in 1983)

1 gallon of cucumbers 2 ½ inch long (I used longer)
8 sm white onions
2 green peppers shredded
½ cup salt

Select crisp, fresh cuc’s.  Wash but do not pare.  Slice in paper thin slice (try ¼ inch).  Slice onion thin and cut the pepper in shreds.  Mix with the 3 vegetables and bury pieces of crackled ice in the mixture.

Cover with weighted lid and let stand 3 hours and drain very well.  

Make a pickling syrup of:
5 cups sugar (2 brown and 3 white)
½ tsp cloves
1 ½ tsp celery seed
½ tsp tumeric
2 Tbsp mustard seed
4 cups vinegar


Mix sugar tumeric, cloves together.  Add mustard and celery seed and the vinegar.  Gey very hot and add the sliced pickles.  Place over low heat and paddle occasionly using a wooden spoon.  Heat the mixture to scalding but do not boil.  Pour into sterilized jars and seal.

Panned Zucchini with Dill

1 sprig fresh dill
½ sm. Onion, chopped
2 Tbsp. bacon drippings
4 c. sliced zucchini
½ tsp. salt
Pepper to taste

Saute dill and onion in hot drippings until golden.  Add zucchini salt and pepper.  Cover; simmer for 10 mins., or until just tender, adding ¼ c. water, if needed.  Yield 4 servings


Colorful Zucchini Casserole

1 lb. zucchini, cubed
1 12 oz. can whole kernel corn, drained
2 med. Cloves garlic, crushed
2 tbsp. salad oil
1 tsp. salt
¼ tsp pepper
½ c. shredded mozzarella cheese

Combine all ingredients except cheese in a large skillet; cover.  Cook over medium heat, stirring occasionally, for about 10 minutes, or until zucchini is crisp-tender.  Stir in cheese; heat through.

2 cups bread crumbs
1 clove garlic, crushed
1 tsp. sweet basil
1 tsp. rosemary
1 tsp. parsley
½ tsp. salt
¼ tsp. pepper
5 sm. Zucchini, thinly sliced
1 cup. Grated Parmesan cheese
½ c. oil.


Mix bread crumbs, garlic, sweet basil, rosemary, parsley, salt and pepper in a medium bowl.  Place half the zucchini slices in a greased 9 in. square pan.  Top with a layer of bread crumbs mixture and half the cheese.  Sprinkle with 4 Tbsp. oil.  Repeat layers, ending with remaining oil.  Bake 375 degrees for 1 to 1 ½ hrs, or until golden brown.  Yield: 6 servings

Zucchini Casserole

6 med. Zucchini, washed and sliced
4 or 5 large carrots, sliced or shredded
½ to 1 c. chopped onion
½ c. margarine
1 pkg. instant stuffing mix
1 (10 ¾ oz.) can cream of chicken soup
1 c. sour cream


Boil zucchini, carrots and onions until semi-cooked.  Stir soup and sourcream together; add to veggies and mix well.  Make stuffing according to pkg. directions.  Toss into veggies and pour into 9 x 13 inch pan.  Bake 45 min at 350.

2 med. Zucchini, washed and sliced
1 med. Onion, diced
½ green pepper, diced
1 tsp. salt
1 8 oz. can tomato sauce
½ c. bread crumbs
½ c. grated cheese


Place zucchini in saucepan.  Add onion, green pepper, salt, tomato sauce and 1 c. water.  Cook, covered until tender, 5 -10 mins.  Pour into greased 1 qt. casserole.  Sprinkle with bread crumbs and cheese.  Bake at 350 degrees for 25 to 30 mins.  Yield 6-8 servings.

4-5 c. Zucchini thinly sliced (peeled)
4 tbsp. onion, chopped
¾ cup carrots, grated (about 2)
1 can cream of chicken soup
8 oz. sour cream
Salt and Pepper to taste
1 box stove top chicken flavor stuffing prepared using directions

Steam vegetables about 5 min. Drain.  Mix all ingredients together except stuffing. (Put ½ of the prepared stuffing in bottom of a 9x 13 pan.  Put mixture on top of that, then put other ½ of stuffing on top of casserole.  Dribble ½ cube melted butter of margarine over top.  Bake at 350 for 30 min.  If dish is glass, cook only for 25 minutes.

3 lg peeled and sliced potatoes
Chopped onion
Hamburger
Salt & Pepper

Sautee hamburger, onion and vegetables (option)

Add:
3 tbsp butter
3 tbsp flour
2 cups milk

Cook till thickened
Sprinkle  with ½ cups grated cheese


Bake 350 for 1 ½ hours if veggies are not precooked.  Or Bake ½ to 1 hour

Myrt's Mystery Pudding

Myrt's Mystery Pudding

1 c. flour
1 tsp. soda
½ tsp. salt
¾ c. sugar

Sift together.  Throw in an egg and 1 tsp vanilla and one #303 can fruit cocktail:  Stir up.

Butter a loaf cake pan.  Pour batter into cake pan and sprinkle with ½ c. brown sugar and 11/2 c. nuts.

Bake at 325 for 45 minutes, or until done.


Serve plain or with whipped cream.

Take the middles out of a bag of Oreo’s and crush the cookies up.  Put on the bottom of a pan.  Then put vanilla icecream on top of that.  Then put Hershey’s chocolate syrup on top.  Top with nuts and freeze!

Peanut Butter Brownies

Peanut Butter Brownies

8 lbs butter = 16 cups
16 ½ lbs sugar = 33 cups
8 ½ lbs flour = 34 cups (use less)
5 ¼ tsp salt
1 ¼ lb cocoa = 5 cups
84 eggs
5 ¼ Tbsp baking powder

1 ½ gallon peanut butter = 4 ½ quarts

3/8 cup vanilla

(I guess this is to make a huge batch?)

2/3 c. melted shortening
1 pkg. Brown Sugar
3 eggs
½ tsp. vanilla
2 2/3 c. flour
3 tsp. baking powder
½ tsp. salt
1 c. chocolate chips
1 c. chopped nuts

Cream shortening, sugar, and eggs.  Add vanilla.  Add dry ingredients, then chocolate chips and nuts.


Bake in a pan about 12x14, (baking sheet) at 350 for 15 minutes

Brownies

Brownies

2 cups flour
¾ tsp. salt
1 ½ cups cocoa
3 cups sugar
1 ½ tsp baking powder
1 cup butter or shortening
6 eggs
3 tsp. vanilla


Beat eggs well, gradually add sugar.  Beat in chocolate and vanilla.  Mix in dry ingredients.  Stir in 1 ½ cups  nuts.  Spread in greased cookie sheet and bake 25 min. at 350.

Peanut Butter Cups

Peanut Butter Cups
4 cups powdered sugar
2 ½ cubes margarine
1 pkg graham crackers
1 cup peanut butter
Mix ingredients together.  It will probably be necessary to use your hands.  Press in 9x13 pan.  Melt 12 oz. pkg of chocolate chips and spread over peanut butter mixture cool and cut into squares.
Sometimes, Myrt rolled the peanut butter mixture into balls and then dropped melted chocolate into a candy paper, placed the peanut butter ball, then dropped more chocolate on top.

One of the highlights of our wedding was the homemade chocolates that Myrt made for our wedding  reception on January 20th.  Amazing

Oh Henry Candy Bars

Oh Henry Candy Bars
1 cup sugar
1 cup light Karo
1 cup peanut butter
1 cup salted nuts
3 cups Rice Krispies
6 oz. chocolate chips (semi-sweet)
6 oz. butterscotch chips

Bring sugar and karo to boil.  Add peanut butter and nuts.  Add Rice Krispies.  Put inot buttered 9x13 pan.  Mel chips together then spread on top Rice Krispies mixture.  Allow to cool and cut into squares.
