Oatmeal Cake
1 ½ cups boiling water
1 cup uncooked Quaker oats
½ cup softened butter
2 cups sugar
2 eggs
1 ½ cups sifted flour
1 tsp. Vanilla
1 tsp. Baking soda
½ tsp. Salt
¾ tsp. Cinnamon
¼ tsp. Nutmeg
Pour boiling water over oats. Cover and let stand for 20 minutes. Beat butter then add sugar until fluffy. Blend in vanilla and eggs. Add oat mixture, then add sifted flour and dry ingredients. Mix all together and pour into the pan. Bake at 350 degrees for 35 minutes.
Frosting for Oatmeal Cake
¼ cup melted butter
½ cup brown sugar
3 Tbsp. half and half or canned milk
1/3 cup chopped nuts
¾ cup cocoa nut
Mix all ingredients for about 2 minutes and spread over cake evenly. Broil until frosting becomes a little brown.
