Eloise bread
5 tsp. Sugar
2 ½ cups warm water
3 1/3 Tbsp. yeast
5 cups milk
Almost 1 cup butter
15 Tbsp. Sugar
3 1/3 Tbsp. Salt
3 ¾ cups cold water
20 cups flour
Soak yeast in warm water with the smaller amount of sugar. Heat milk and add butter, sugar, salt, and cold water. Mix and add flour. Let rise until doubled in bulk, pinch down and let rise again. Make into loafs and let rise to double in bulk. Bake at 450 degrees for 10 minutes and then at 325 degrees for 35 minutes.
